Happy Cinco de Mayo

The Ultimate Pico de Gallo

2 1/2 cups diced plum tomatoes (5-6)

1/2 cup fine diced red onion

1/4 cup fresh copped cilantro

1 small jalapeno finely minced

1 clove garlic finely minced

juice of one lime

1T olive oil or avocado oil

1/2 tsp pink salt

Dice plum tomatoes into small bite sized pieces, in a medium bowl add all the ingredients and toss well to combine. Taste and add additional salt if needed.

Another Great option is to add diced pineapple and mango to create a delicious tropical topping for fish or grilled chicken.


4 Ripe avocados

3/4 cup pico de gallo

1T fresh lime juice

1/4 tsp dried fine oregano (i like oregano powder best)

1/4 tsp garlic powder

1/4 tsp cumin

salt to taste.

In a medium bowl add avocado and mash to the texture you desire add the pico de gallo lime juice oregano garlic powder and cumin to avocado stir well to combine add sea salt Refrigerate until ready to serve.
